Sencha is gently steamed, rolled and dried after harvesting and is traditionally used for tea ceremonies. The fresh, complex taste of this unfermented tea specialty is reminiscent of unpeeled almonds and explains its popularity far beyond Asia.
Preparation: Pour hot, no longer boiling water over 1 teaspoon per cup (200 ml) and leave the tea to infuse for 2 minutes.
