Natural tofu comes from China, where it has been prized for over 2,000 years. Whether spicy, hot, sweet or sour - natural tofu can be seasoned in any way you like. Its firm consistency makes it ideal for marinating, deep-frying and sautéing.
Before processing the tofu, pat it dry with kitchen paper or leave it to drain for a longer period of time. If you are not using the whole piece of tofu, place the reserved tofu in a bowl and cover it completely with fresh water. This will keep your tofu fresh in the fridge for three to four days. Open: Place the packet of tofu with the label facing down on a chopping board and cut lengthwise down the middle with a sharp knife. Lightly pat the tofu dry in a kitchen towel and cut into shapes as desired.Freezing:You can also freeze tofu. It will then keep for several months, but will change color and become more porous and firm to the bite. After defrosting, first drain and squeeze the tofu. Caution: natural tofu takes on spices particularly easily after defrosting! Frozen natural tofu is very suitable for tofu cutlets.Frying:Heat a little oil in a cast-iron or well-coated frying pan and bring to just before the smoking point. Place the tofu in the hot pan and fry on level 3-4, turning several times, until golden brown on all sides.Marinating:A tasty and quick way to prepare tofu is to marinate cubes or slices in soy sauce, wine or a marinade of your choice: pat the tofu dry beforehand so that the marinade can soak in better. The longer tofu is marinated, the more intense the flavor. This tofu is suitable for frying, breading and cooking.Breading:Cut the tofu into slices, pat dry and season as desired. Dredge the slices in flour, pat down and then dip in liquid, e.g. soy or rice milk. Alternatively, you can mix cornflour with a little soy sauce. Then coat in breadcrumbs and pat down. Finally, fry in fat over a medium heat until golden brown.
