Einkorn is an ancient grain that was cultivated more than 10,000 years ago. At Spielberger Mühle, the einkorn is carefully cleaned and processed after harvesting. The natural processing preserves the grain in its full form, so that the mild, delicate taste and natural structure are retained. einkorn is ideal for grinding flour for breads, rolls and pastries. However, einkorn also comes into its own as flakes for muesli or cooked as a side dish to savory dishes or salads, thanks to its slightly nutty taste and versatility in the kitchen. If you value traditional grains, einkorn is an excellent choice.
Basic recipe: Soak einkorn overnight, then cook in fresh water for approx. 30-40 minutes until soft. einkorn is suitable freshly ground for baking bread and pastries, flaked for muesli or cooked as a side dish, in casseroles and soups.
