Maize is naturally gluten-free. To ensure that the gluten content of our gluten-free corn semolina is guaranteed to be below 20 ppm (20 mg/kg) gluten, the product is kept carefully separate from all gluten-containing products and analyzed several times. To this end, strictly separate product flows and separate production lines are used. The products only leave our premises once the last analysis has confirmed that they are gluten-free. We use glassine paper for an ecological and safe packaging solution for gluten-free products. This is very dense and has a grease barrier. We use a complete inner bag made of this paper for our bags for gluten-free products. It offers sufficient protection against subsequent contamination. Because it is made of 100% paper, it can be easily disposed of with the waste paper. Polenta is an Italian specialty made from corn, which is also very popular in other Mediterranean countries. It is made from a type of maize grown by our partner farmers in Italy and Austria. The maize grain is ground into semolina.

Corn semolina can be used classically for porridge - better known as polenta - for slices, dumplings or in a casserole; basic polenta recipe: Bring 2 cups of vegetable stock to the boil, stir in 1 cup of corn semolina. Leave to swell over a very low heat for 15-20 minutes. If necessary, stir in an egg afterwards. Use a little less liquid for polenta slices, approx. 1 1/2 cups.
