The best demeter soybeans are used for the soy flour. To produce flour, the soybeans are cleaned after harvesting and then roasted. Roasting neutralizes natural toxins. The beans are then ground with the utmost care and sensitivity to produce this full-fat flour. Soy flour tastes slightly nutty. It is suitable as a vegan egg substitute in baked goods and for binding patties.botanically speaking, the soybean belongs to the legume family. It has been used as a crop in China for thousands of years. In our part of the world, too, soy products are becoming increasingly important in a balanced diet. Not only tofu and soy milk play an important role, but also products such as soy flakes and soy flour, which are used as a substitute for cereal products, especially for people with gluten intolerance.

Soy flour can replace up to 20% of the grain in baked goods and thus provide an extra portion of protein. It is also suitable as a vegan egg substitute for baked goods and for binding patties.
