Whether as a side dish to stews and vegetables, in salads or as a filling for vegetables - couscous is a versatile ingredient that is a must in Mediterranean and North African cuisine.Thanks to its simple preparation and neutral taste, couscous can be wonderfully combined with various herbs, spices or sauces.
Basic recipe: Pour the same amount of boiling water or stock over the couscous, cover and leave to soak for approx. 5 minutes. Then fluff up with a fork. A typical portion of couscous is around 60-80 g per person when served as a side dish. For a main course or if the couscous is used as the main ingredient in a salad or other dish, you can plan on about 100 g per person.Couscous is ideal as a side dish to stews, meat or vegetable dishes, as a base for salads or as a filling.
