Emmer, demeter

Emmer is one of the oldest types of grain and was already an important foodstuff in ancient times. At Spielberger Mühle, emmer is thoroughly cleaned after harvesting and gently processed. The whole grain remains in its natural form and is ideal for a wide range of preparations, and the mild, slightly nutty taste of emmer makes it a valuable ingredient for healthy and varied cuisine. Whether freshly ground for breads and pastries, as flakes for muesli or cooked as a side dish, in salads or casseroles, emmer is also an ideal alternative for people who like to work with traditional grains. Its special taste and good workability make it a favorite in wholesome cuisine.
Basic recipe: Soak emmer overnight, then cook in fresh water for approx. 40 minutes over a low heat.emmer is suitable for grinding for bread and pastries, for flaking for muesli or as a garnish for savory dishes such as salads and stews.
