Chickpeas are grown in Germany and ensure better soil fertility thanks to nitrogen fixation in the soil. Chickpeas are a valuable source of protein, and not just for vegetarians and vegans. With their aromatic, mild taste, they are suitable for stews, salads, hummus or falafel, for example. They are also used in numerous Asian dishes, and the partner farmers at Spielberger Mühle in Franconia are successfully cultivating chickpeas in Germany. Thanks to their ability to bind nitrogen in the soil with their roots, chickpeas increase soil fertility and are a valuable source of protein not only for vegetarians and vegans. With their aromatic, mild taste, they are suitable for stews, salads, hummus or falafel, for example. They are also used in numerous Asian dishes.
Basic recipe: Soak 250 g chickpeas in plenty of water overnight (approx. 12 hours). Drain the soaking water and rinse the chickpeas. Bring the chickpeas to the boil with 1.5 liters of fresh water and simmer for approx. 60 minutes (e.g. for salads) or 90-120 minutes (for hummus). Only add salt at the end of the cooking time and pour off the remaining water.chickpeas are ideal for stews, salads, hummus or falafel. They are also used in numerous Asian dishes.
