Amaranth, glutenfrei, demeter

Botanically speaking, amaranth is not a grain, but can be used in many dishes as a grain. Amaranth is a high-quality source of protein and is naturally gluten-free. Use amaranth as a whole grain as a side dish, in vegetable stir-fries, casseroles, as a soup garnish or for fillings. It also tastes good in sweet casseroles and dishes, and ground amaranth is suitable for use in gluten-free bakery mixes.Our Spielberg amaranth comes from a Demeter smallholder initiative in northern India. Here, several hundred farmers are mainly self-sufficient. Their surpluses are collected through a local initiative and marketed together. This gives many Indian farmers a sustainable opportunity for a healthy and economic future. A great project that we are happy to support.

Basic recipe: Wash the amaranth. Bring 250 g amaranth to the boil with 625 ml water and simmer gently for 20-30 minutes. Then leave to swell for a further 5 minutes.
