We produce our rye flakes with the greatest care in our own flake mill. There, the whole grain is steamed and then rolled into a beautiful flake. This preserves all the ingredients of the whole grain. With large flakes, one grain makes one flake. Rye flakes have a strong, hearty taste and are very healthy. They are particularly rich in satiating fiber and B vitamins, which are particularly important for energy production and the nervous system.
Rye flakes give mueslis and flake mixtures a particularly strong flavor. Our rye flakes can be enjoyed without cooking or soaking. Simply mix with yogurt, milk, plant-based alternatives or juice and enjoy warm or cold. Refine as desired with fresh fruit, dried fruit, nut butter, jam, honey or spices, for example. In addition to the classic use as a muesli ingredient, flakes also taste great in baked goods such as cookies, muesli bars or bread. For example, roll strong mixed or wholemeal bread in rye flakes before baking. Recipe: Brown bread; 1 packet dry sourdough, 200 g rye flakes, 300 g rye flour type 1150, 50 g each sunflower seeds and linseed, 15 g salt, 1 tbsp honey, 400 ml lukewarm water, 10 g yeast; Place all ingredients in a mixing bowl and knead well. Cover the dough in the bowl and leave to rise overnight in the fridge. Pour the dough into a well-greased, floured tin. Cover and leave to rise in a warm place for 1 hour. Preheat the oven to 250 °C. Place a metal bowl of water on the bottom of the oven and place the bread on the middle shelf. After 5 minutes, reduce the heat to 200 °C and bake for approx. 40 minutes.
