The best Demeter-certified spelt is used to make these whole-grain spelt farmer s spätzle. At the Spielberger Mill, the grain is ground in several steps into a whole-grain flour that still contains all the valuable components of the grain. The whole-grain flour is then processed into spätzle. Thanks to the spelt, these whole-grain spätzle have a delicate nutty flavor and are a wholesome alternative for traditional Swabian dishes such as cheese spätzle or lentils with spätzle. They also pair well with dark sauces, cream sauces, or mushroom sauces. Plus, they re delicious in stews and casseroles. The pasta packaging is made from 100% wood, a renewable resource. With the rise of the organic movement, spelt was rediscovered as an unadulterated ancient grain. Until the Middle Ages, it was considered the most important bread grain. Basic recipe: Cook wholemeal spelt farmer's spaetzle in plenty of boiling salted water for 10-12 minutes so that the spaetzle is firm to the bite. Wholemeal spelt spaetzle tastes great as a wholesome alternative in traditional Swabian dishes such as cheese spaetzle or lentils with spaetzle, but also with dark sauces, cream or mushroom sauces as well as in stews and casseroles.
