The best Demeter-certified spelt is used to make the light-colored spelt farmer s spätzle. At the Spielberger Mill, the grain is ground in several steps into a medium-light flour that still contains valuable components of the grain. The flour is then shaped into Spätzle. Thanks to the spelt, these Spätzle have a delicate nutty flavor and are perfect for traditional Swabian dishes such as Käsespätzle or lentils with Spätzle. They also pair well with dark sauces, cream sauces, or mushroom sauces. They re also delicious in stews and casseroles. The pasta packaging is made entirely from wood, a renewable resource. It can be disposed of entirely with paper waste and is 100% recyclable. Through a long-term partnership with Bergwaldprojekt e.V., Spielberger Mühle funds the planting of trees each year, as well as the care and preservation of existing forests. The latter allows the forest to regenerate naturally meaning new trees grow and the forest thrives. This closes the paper cycle by offsetting the paper used for packaging and giving something back to nature. Spelt has a delicate, nutty flavor. With the rise of the organic movement, spelt was rediscovered as an unadulterated ancient grain. Until the Middle Ages, it was considered the most important bread grain. It was only with the intensification of agriculture and the increased use of synthetic fertilizers that the grain fell into obscurity. There was a very simple reason for this: unlike wheat, spelt hardly responds to nitrogen fertilizer with an increase in yield. In organic farming, however, the grain s positive qualities are highly valued. In addition to its delicate nutty flavor and better digestibility, spelt is distinguished by the fact that it thrives even in areas with higher rainfall and at higher altitudes.
Basic recipe: Cook the spelt farmer's spaetzle in plenty of boiling salted water for 9 - 11 minutes so that the spaetzle is al dente. Spelt farmer's spaetzle tastes great in traditional Swabian dishes such as cheese spaetzle or lentils with spaetzle, but also with dark sauces, cream or mushroom sauces as well as in stews and casseroles.
