It's so easy:Preparation with egg and quarkIngredients: 125 g butter, 4 eggs, 750 g quark, and juice of 1/2 lemonVegan preparation: 125 g margarine, 750 g natural or vanilla soy yoghurt and juice of 1/2 lemon- The quick base -1. Melt the butter or margarine and mix with the base mixture for the base. Leave to stand briefly. Pour the flake mixture into an ungreased mold. Press down firmly on the base and raise the sides by approx. 2 cm. Don't worry if everything looks a little crumbly, the flakes will become firm and crispy when baked.Tip: Dip the back of a tablespoon in cold water to press the flakes into the tin.- The quick filling -2. For the filling, place the eggs, quark and lemon juice in a bowl with the base mixture for the topping and stir briefly and vigorously with a whisk. It is not necessary to separate the eggs. For an egg-free and dairy-free preparation, simply mix the soy yoghurt, lemon juice and the base mixture for the topping - Baking -3. Pour the quark or yoghurt mixture into the tin and spread evenly. Bake in a preheated oven at 200 °C for 50-60 minutes on the lowest shelf. The cake will be nice and crispy and not too dark on top. The cake is ready when the quark mixture has risen in the middle: Bake in a gas oven at level 3. Please do not bake with convection oven, as the vegan cake only reaches its optimum firmness when it has cooled.
