Our fine, gluten-free potato flour is ideal for dumplings and dumplings. It is also suitable for baking and for thickening desserts, creams, cold dishes, sauces and soups.

Potato flour for thickening: Mix the potato flour in cold liquid and then stir into the boiling liquid. Bring to the boil briefly. Approx. 4 level tablespoons (40 g) of starch per liter of liquid are required to thicken sauces and soups. Approx. 90 g starch per liter of liquid is required for flummery and porridge, and approx. 60 g for creams.Recipe recommendation: Potato dumplingsCut 800 g peeled potatoes into pieces and boil in salted water until soft, drain and immediately press through a potato ricer. Knead into a smooth dough with 60 g melted butter, 1 egg, 150 g potato flour and 1 level teaspoon of salt. Shape the dough into dumplings with damp hands. Bring a large pan of salted water to the boil. Roll the dumplings briefly in the potato flour and place in the boiling water. Boil over a moderate heat for approx. 20 minutes. Caution! The water must not bubble! The dumplings will float to the surface when they are ready. Then lift them out of the water with a slotted spoon.
