In the famous growing region of Nemea in the north-west of the Peloponnese, Nikos & Costas from Sofia Tis Fisis specialize in the production of grape vinegars from the local grape varieties Roditis (white) and Agiorgitiko (red). The balsamic cream with mandarin is a sweet grape vinegar made from hand-picked grapes of the Greek variety Agiorgitiko, which is slowly boiled down with Petimezi (a concentrated grape juice) until a thick cream is formed. Whole mandarins from the island of Chios are added at the end to give it its characteristic flavor. The natural, perfectly balanced sweet and sour balsamic cream contains no additives. It is ideal for preparing rocket, meat and desserts in creative cuisine and the label is made from environmentally friendly bagasse, unbleached and without protective varnish.
