For Theodorus Kontogiannis, the love of his land and the aspiration to produce outstanding olive oil are at the forefront of everything he does. The family's olive groves and vineyards are located at the foothills of ancient Corinth in the Peloponnese in Greece. The family brings together the entire spectrum of the Corinthian terroir through the biodynamic cultivation of various plots at different altitudes. The olive trees bear olives of the Manaki and Koroneiki varieties. The olive trees are not artificially irrigated, the plants are closely monitored and strengthened with herbal decoctions. To promote biodiversity and prevent soil erosion, Theodorus Kontogiannis collects and propagates seeds from endemic wild herbs and flowers and spreads them on his plots. To produce his own organic olive oil, the Manaki and Koroneiki olives are processed on the same day they are harvested. His oil mill uses a modern Mori machine in which the olive pulp does not absorb any oxygen from outside during processing. This results in particularly gentle, value-preserving processing.
