We recommend storing the unopened jars on a dry shelf or in a dry store. We recommend storing opened jars in the refrigerator. Cold storage only serves to stabilize the colour. After 9 months, due to the fact that we do not use any antioxidants, the color changes slightly due to the breakdown of chlorophyll (green color in the vegetables), which is harmless for consumption. However, German food law stipulates that the best-before date is reached as soon as the quality-describing characteristics (e.g. color) change. The 9 months specified by us therefore only refer to the color change, not to the actual shelf life.
