Ripe organic raspberries give Byodo raspberry vinegar (5% acidity) its intense berry flavor and beautiful, bright red color. These are processed into fine raspberry wine and raspberry concentrate. The wine is then slowly fermented into vinegar at pleasantly warm temperatures. This process is known as continuous vinegar fermentation. The finished vinegar is seasoned with raspberry concentrate and filtered before bottling. Like all Byodo vinegars, it is completely natural and is not heated. This preserves valuable enzymes and flavors in a delicious way. Cloudiness or deposits at the bottom of the bottle and possible flakes do not mean a loss of quality. Quite the opposite! They indicate the natural production method of this organic product. So-called "vinegar nuts" can simply be strained off and the vinegar can be used as normal.
With its intense berry, fresh note, Byodo raspberry vinegar tastes delicious with fresh leaf salads such as chicory and lamb's lettuce. This fine organic vinegar made from raspberries is also great for refining game and lamb dishes as well as for preparing chutneys and sweet and sour fruits.
