Maître Provence
Fine, creamy, semi-soft organic semi-hard cheese with an aromatic herb and blossom coating. The full-fat milk comes from organic farms in the Netherlands. The influence of the adjacent North Sea with its clear, salty air characterizes the pasture landscape and ensures herb-rich, tasty fodder. Our Maîtres Fromagers Danielle and Jozef, true masters of their trade, use this to make so-called -green- cheeses according to traditional recipes from Alsace. They come from a small, artisan organic cheese dairy and must be cheesed in such a way that they are suitable for subsequent rind maturing in the Schönau maturing cellar, which is the responsibility of our Allgäu Maître Fromager Anton. He not only understands the art of red culture affinage, but also creates the hand-applied herb and flower coats. His cheese specialties not only taste excellent, but also smell of herbs and flowers. That's why we recommend eating it with a herb coating without cutting off the breaded rind.
As a topping on crusty baguettes or wholemeal bread/rolls, for gratinating casseroles and barbecued food, diced as a snack with wine and beer, as an ingredient in a variety of salads.
