Dorfkäserei Geifertshofen is a small artisan cheese dairy in the district of Schwäbisch Hall, which is known for its specialty cheeses made from organic hay milk TSG. Since its foundation in 1998, the aim has been to give the smaller organic farms typical of the Hohenlohe/Swabian Forest region a sustainable perspective. Our dairy farmers:For the production of high-quality hay milk, the dairy farmers receive a fair milk price that is based on their actual costs. Each of our milk suppliers should be able to make a living from their work. Our hay milk comes exclusively from family-run organic and Demeter farms, which we collect with our own milk collection vehicle. Animal welfare is very important to us. We therefore reward the extra effort our farmers put into keeping cows with horns with a horn bonus of 2 cents per kg of milk.Haymilk TSG:Haymilk is the most original form of milk production. The traditional method of hay farming has been awarded the EU seal of quality - TSG - guaranteed traditional specialty - and our hay milk gives the cheese a typical regional character. It reflects the variety of herbs and grasses consumed by the cows. The milk is also rich in valuable omega-3 fatty acids and is fed according to the seasons: from spring to late summer, the cows graze on the green meadows of our region, while in winter they are given aromatic, sun-dried hay. Silage is not used at all. This environmentally friendly hay farming is good for the animals, the preservation of biodiversity and the taste.natural maturing:We give our cheese time to develop its typical aroma and appearance. The cheeses are stored and matured for months - some varieties up to 18 months - in special maturing cellars made of brick vaults.in this natural and ideal maturing climate, cultivated with care and salt water, our cheeses develop their natural rind and their characteristic, variety-specific taste for unmistakable moments of pleasure. All our cheeses are pure, unadulterated natural products, made according to our purity principle: from fresh hay milk using cultures, evaporated salt and rennet.
