ÖMA Allgäuer PfefferWilli, Bioland - Laib
Go where the pepper grows? That's what Rudolf Bühler, Chairman of BESH (Bäuerliche Erzeugergemeinschaft Schwäbisch Hall) and founder of Ecoland Herbs & Spices, did. He discovered a group of indigenous people in southern India who cultivate spices in the mountains of Kerala. Following the example of BESH, Bühler founded a producer group there, which today cultivates old pepper varieties in the Periyar Tiger Reserve using traditional methods. Master cheesemaker Max Sontheim from Allgäuer Käsemanufaktur uses this precious jungle pepper to create ÖMA Allgäuer PfefferWilli: his passion is to refine cheese with precious spices. His semi-hard cheese is made from fresh Allgäu organic milk and cultivated by hand with red cultures during the ripening process. This gives it its spicy, aromatic taste. The small wheels are allowed to mature on spruce boards for at least 6 weeks. Only when the cheeses have developed their characteristically fine flavor are they coated with the exquisite jungle pepper by master cheesemaker Max Sontheim. The colorful pepper mixture is applied directly to the natural rind and can therefore also be eaten. The fine, earthy, peppery and slightly spicy taste plays off the fine aromas of the cheese with every bite. Because pepper makes you happy - at least that's what it's said to do. One thing is certain in any case: a piece of ÖMA Allgäuer PfefferWilli puts a smile on the face of any cheese lover.

Unsere Schnittkäse sollten vor dem Verzehr ca. 1 Stunde Zimmertemperatur genießen dürfen. Sie lagern bestenfalls im mittleren Bereich des Kühlschranks bei ca. 6-8°C und sollten im immer gleichen ÖMA Käsepapier aufbewahrt werden.
