Mugi Miso unpasteurisiert
Mugi Miso is made from organic soybeans and barley. This miso is a perfect blend of all five flavors: salty, sweet, bitter, sour and umami. Mugi Miso is made by hand and ferments for at least 12 months in 100 year old cedar wood barrels. This time is necessary to intensify the flavor and develop healthful properties. The result is an authentic-tasting Japanese condiment that is somewhere between hatcho and shiro miso in terms of taste. Mugi miso is also very tasty in a (miso) soup, but also goes well with noodle, vegetable and tofu dishes. Mugi miso has a medium-bodied taste and is slightly saltier than Genmai miso. 1 tablespoon replaces one stock cube.
