The particularly aromatic Quorum variety is used for Prima Bio's date tomato passata. The fiery red fruits are harvested by hand in July and August when they are perfectly ripe. In order to preserve the taste, aroma and nutrients, the fruit is processed on the day of harvest. After being washed and selected, they are steamed and then crushed and strained. The resulting liquid puree is concentrated in a vacuum at low temperatures, and after bottling, the bottles are sealed and pasteurized. The gently produced passata retains the organoleptic properties of the sun-ripened date tomatoes, giving it its intense flavor. The smell of fresh, ripe tomatoes is noticeable as soon as you open the bottle.
