Sukkari is the Arabic word for sugar. This date is indeed sugary sweet, with a caramelly, nutty note. As the succari ripens, it begins to dry out on the side where it was attached to the vine. This causes the fruit sugar to crystallize and the date hardens at this point. Many people love this semi-crunchy, semi-soft consistency of the fruit.
