Aurora Gaias Zweige is an eight-week-aged semi-hard cheese made from 100% organic goat s milk, refined with a special blend of red mold, rosemary, and thyme.After being made with vegetarian rennet, the cheese is cured in sea salt brine and then traditionally aged on spruce wood boards. During aging, the cheese is regularly washed with an aromatic brine over several weeks, allowing its characteristic rind and intense flavor profile to develop.As part of the  Gifts of the Gods  line, this cheese is dedicated to Gaia, the Earth Goddess, and combines nature, heritage, and the art of artisanal aging. Due to the aging process, the cheese is naturally lactose-free after just four weeks.Character & Flavor: Aurora Gaias Zweige captivates with a complex, aromatic flavor profile. The red culture aging process gives the cheese a spicy, slightly tart depth, while rosemary and thyme contribute Mediterranean, delicately aromatic notes.Repeated washing with the brine during aging intensifies the aromas and creates a special depth of flavor a  divine touch  that gives the cheese its unmistakable character. The characteristic goat s milk flavor remains harmoniously integrated, elegantly rounding out the overall profile. Milk & Processing: The organic goat s milk used is pasteurized but not standardized. This preserves its natural composition in terms of fat content, protein structure, and color, forming the basis for the development of complex flavors. The several-week-long aging process with red cultures, as well as regular washing with herbal brine, are crucial for the development of the intense flavor and the characteristic rind. This artisanal care gives the cheese its depth and individuality. Seasonal Variations: Since the milk is not standardized, Aurora Gaias Zweige exhibits natural variations in color, texture, and flavor intensity throughout the year. The development of the rind flora may also vary. These differences are a hallmark of artisanal production and underscore the product s vibrancy. Texture & Consistency: The cheese has a smooth yet progressively firm texture with a creamy center. Beneath the rind, a particularly aromatic, slightly softer zone develops, further intensifying the flavor experience.
