Genmai Su
Unsweetened sushi vinegar is also known as genmai su or rice vinegar. You can use it not only to season sushi rice, but also to make delicious dressings, season wok dishes or to cover up an excess of salt in a dish. It is also delicious in combination with other Japanese seasonings such as shoyu, tamari and sesame oil, or with its sweet counterparts ginger syrup and mirin. Sushi vinegar is brewed in the traditional Japanese way.
Can be used both hot and cold.
