Aurora Gold Ziege mild
The Aurora family cheese dairy has been processing exclusively organic milk since 1980. To produce the Aurora Gold Young Goat Hard Cheese, the milk is gently pasteurized but not standardized. This preserves the milk s natural composition. Natural variations in fat content, flavor, and texture are therefore possible and reflect the characteristics of an artisanal cheese. The cheese is made with vegetarian rennet. After production, it is immersed in a sea salt bath for several days. This step promotes the natural formation of a rind and lays the foundation for subsequent aging. After a minimum of four weeks of aging, the cheese is naturally lactose-free. Its well-balanced flavor makes it a versatile goat cheese specialty suitable for a variety of uses.
