Like mozzarella, burrata belongs to the group of filata cheeses, the so-called scalded and kneaded cheeses. The milk for ÖMA Burrata di Bufala comes from buffalo cows that graze in an untouched area nestled between the Abruzzo and Matese national parks. During production, the filata cheese is molded into the typical bag shape. This casing is filled with cow's cream and Mozzarella di Bufala plucked into fibers and closed again with skilled hands. The cream filling gives the Burrata di Bufala its creamy consistency and hints at its name: the Italian word burrata means 'buttered'. ÖMA Burrata di Bufala has a smooth, pure white surface, the taste of the pasta filata cheese is fresh, buttery and creamy with a subtly acidic buffalo note. The typical sachet shape is a real eye-catcher. If you cut open a Burrata di Bufala, a creamy delight pours out of its interior, enchanting the palate. ÖMA Burrata di Bufala is available in practical 125g tubs and in 1kg buckets for the service counter, with background information and stories about the cheese, the farmers and the dairy for interested customers and cheese lovers. The Azienda Agricola Ponte Reale - idyllically situated on the bridge of the same name in Campania - was founded in 1993 by Enrico Rega. His aim was to successfully lead the existing buffalo breeding, production and marketing of buffalo milk products into the future through modern management in harmony with Campania's agricultural tradition. This would also enable him to preserve the love of livestock farming and milk processing inherited from his grandfather Pasquale Rega - who had already been famous for his products in 1890 - and make Ponte Reale the first producer of organic buffalo mozzarella with a protected designation of origin (DOP - Denominazione d-Origine Protetta). Today, the company is a shining example of the successful combination of old artisan traditions, modern, sustainable values and corporate responsibility for the ecosystem and the social environment. The family business, which is now run by Enrico's sons Luigi and Massimo Rega, sets the highest standards of hygiene and product safety from the field to delivery. The result is buffalo milk products for cheese lovers that have the best characteristics in terms of smell, taste, appearance and color. The milk comes from the company's own buffalo farm and from certified organic farms in the region. The Azienda covers an area of 1200 hectares, on which the farm's own fodder is grown and around 1800 water buffalo graze.
Burrata made from buffalo or cow's milk is a versatile cheese. Among other things, it is used where mozzarella is indispensable. Thanks to its creamy filling, the fine pasta filata cheese is the ideal topping on an antipasti plate, makes an excellent addition to tomato soup and turns a simple salad into a special starter. It also tastes great on its own or gratinated. In Italy, the pasta filata cream filling is topped with bread.
