ÖMA Allgäuer Ziegenkäse Kräuter is a particularly strong and spicy specialty. Like the natural version, the semi-hard cheese is made from fresh Naturland goat's milk and is cultivated by hand with red cultures during the ripening process. The goat's milk is delivered fresh daily from a neighboring goat farm to the dairy, where it is carefully processed by our cheesemaker Rudi Gmeiner. For a special taste experience, it is coated with a herb and spice mixture from Sonnentor, which also contains flower petals, etc. In combination with the ÖMA Allgäuer Ziegenkäse Natur, these two specialties are an exceptional taste experience of a special kind, with background information and stories about the cheese, the farmers and the dairy for interested customers and cheese lovers. Nestled in a small high valley close to the steep slopes of the Allgäu Alps lies the ÖMA dairy, the Sellthürner Käskuche. The traditional business was founded by farmers back in 1907. The entire farm was converted to organic farming in 1995. Today, the fresh hay milk is collected daily from 7 Naturland farms - located at an altitude of approx. 900m - within a radius of 15km around the dairy. Our cheesemaker Rudi Gmeiner - an absolute Allgäu original - processes the milk by hand and according to old tradition in a copper kettle to make exceptionally tasty cheese specialties. The wheels are turned three times a week and rubbed by hand with a mixture of red smear bacteria, salt and water, which develops their taste and forms the typical rind, and in addition to the cow's milk specialties, the dairy also produces two goat's milk cheeses. The goat's milk for these cheeses arrives fresh daily at the dairy from 2 neighboring goat farms and is carefully processed there by our cheesemaker Rudi Gmeiner.
For all those who like to eat a strong, spicy goat's cheese between meals instead of a normal sliced cheese, this is ideal for the same uses. However, its strong taste gives it a particularly intense flavor, especially when used warm.

Unsere Schnittkäse sollten vor dem Verzehr ca. 1 Stunde Zimmertemperatur genießen dürfen. Sie lagern bestenfalls im mittleren Bereich des Kühlschranks bei ca. 6-8°C und sollten im immer gleichen ÖMA Käsepapier aufbewahrt werden.
