BIO vom BERG Tiroler Kaiserstolz 12 months is a special kind of hard cheese. The hay milk for this specialty comes from organic farmers in the Wilder Kaiser region. The Plangger cheese dairy from Niederndorf in the Tyrolean lowlands refines the valuable raw material from the organic farmers. Finally, the small, approx. 2 kg mountain cheese wheel matures in the rock cellar until it is ready to be enjoyed. The cheese paste retains its smoothness through storage in the natural rock cellar. In the ripening stage of at least 12 months, the cheese is very tangy with the formation of the first small salt crystals in the cheese paste.BIO vom BERG - nomen est omenThe small, fine Tyrolean producer label BIO vom BERG stands for the preservation of small-scale mountain farming. Grassland farming on steep slopes has a long tradition on family farms. Over the centuries, a unique cultural and living environment has been created in the Alpine mountain region, and Tyrolean organic farmers have an average of ten to fifteen cows in their barns and take their animals to the mountain pastures in summer. There, the cattle are fed grass and alpine herbs on the meadows. For the rest of the year, high-quality mountain hay is on the menu - the result of the organic farmers' hard work on the steep pastures, and the Tyrolean organic hay milk is turned into a wide variety of cheese specialties in the dairies. The production of top-quality foodstuffs and luxury foods strengthens the regional economy and ensures the continued existence of mountain farming.
