Tomatenpassata
The tomato variety -Delfo a bacca tonda- is used for Prima Bio's passata. The crunchy fruits are harvested by hand in July, August and September when they are perfectly ripe. In order to preserve the taste, aroma and nutrients, the fruit is processed on the day of harvest. After being washed and selected, they are steamed and then crushed and strained. The resulting liquid puree is then concentrated in a vacuum at low temperatures and, after bottling, the bottles are sealed and pasteurized. The gently produced passata retains the organoleptic properties of the sun-ripened tomatoes, giving it its sweet and unique taste. The smell of fresh, ripe tomatoes is noticeable as soon as you open the bottle.
