ÖMA Allgäuer ZiegenBrie, Bioland - Theke
On lush green meadows and pastures in the idyllic village of Vogelsang near Kempten in the Allgäu region, 116 colorful German Edelziege goats are nagging vigorously! Master cheesemaker Johannes Egger took over his parents' farm at the age of 23, courageously switched from traditional cow husbandry to the lively goats and organized the farm according to Bioland guidelines. Today, Johannes successfully processes his goat's milk into delicious soft cheese specialties in his own dairy kitchen. He feeds his goats only the best grass and hay; they are only given grain as a lure in the milking parlor. With 2 square meters of space, each goat has enough room in the loose housing to meet its need for movement and also to reduce the risk of injury from the horns. Grazing is obligatory during the growing seasons and with these ideal basic conditions, each goat produces around 3 liters of precious milk per day. The wonderfully creamy ÖMA Allgäuer ZiegenBrie is one of the delicacies that Johannes Egger produces by hand from his cheese vat: he adds rennet and a mixture of special Camembert cultures to his fresh Bioland goat's milk. This is how the typical white mold forms. After a short salt bath, the fine soft goat's cheese matures for at least 7 days and is then packaged by hand. The mildly aromatic ÖMA Allgäuer ZiegenBrie enriches every cheese platter and is a welcome guest on the snack plate.
Mild soft goat's cheeses enrich every cheese platter and bring variety to snack plates. Brie is used to make -Obatzda- in Bavarian cuisine. It is mixed with other ingredients such as butter, cream, finely chopped onions, caraway seeds and paprika powder. ÖMA Allgäuer ZiegenBrie gives -Obatzda- that certain -goat kick- - no need to complain!
