ÖMA Mozzarella di Bufala Campana DOP comes from the heart of Campania - the wild south of Italy. Its incomparable character is characterized by a juicy core, a slightly firmer outer casing and a delicately acidic taste. Nowadays, it is impossible to imagine the kitchen without mozzarella and so the original made from buffalo milk - as a ball and as pearls - belongs in every self-service chiller cabinet. The Italian buffalo milk specialty was placed under protection of origin by the European Union in 1996 with the DOP (Protected Designation of Origin) seal. There is the 'Mozzarella di Bufala DOP' and the 'Mozzarella di Bufala Campana DOP', which is even more special because the origin of the milk and the production site are precisely defined in addition to the production process, and there is background information and stories about the cheese, the farmers and the dairy for interested customers and cheese lovers. The Azienda Agricola Ponte Reale - idyllically situated on the bridge of the same name in Campania - was founded in 1993 by Enrico Rega. His aim was to successfully lead the existing buffalo breeding, production and marketing of buffalo milk products into the future through modern management in harmony with Campania's agricultural tradition. This would also enable him to preserve the love of livestock farming and milk processing inherited from his grandfather Pasquale Rega - who had already been famous for his products in 1890 - and make Ponte Reale the first producer of organic buffalo mozzarella with a protected designation of origin (DOP - Denominazione d-Origine Protetta). Today, the company is a shining example of the successful combination of old artisan traditions, modern, sustainable values and corporate responsibility for the ecosystem and the social environment. From the field to delivery, the family business sets the highest standards in terms of hygiene and product safety. The result is a product for cheese lovers that has the best characteristics in terms of smell, taste, appearance and color. The milk for the cheese comes from the company's own buffalo farm and from certified organic farms in the region. The Azienda covers an area of 150 hectares, where the farm's own fodder is grown and the water buffalo graze.
Sometimes it just has to be buffalo. Fibrous on the outside and almost soft at the core, our buffalo mozzarella is ideal for gratinating, for the original caprese and for any other dish that calls for mozzarella.
