Delicately creamy and crispy delicious. Wonderfully creamy topping on a crispy cake base made from gluten-free oat and tigernut flakes. The flakes are handmade in our own flake mill and give the cake base a very special taste. And the best thing is: with our baking mixes you avoid waste and help nature, because you avoid plastic: no plastic inner bag, but packaging made from 100% paper. You avoid packaging waste: No folding box, so on average less than half the packaging waste compared to baking mixes with a folding box.
Add: 125 g butter or margarine 500 g quark (low-fat) 4 eggs (size M) 250 ml cream Zest and juice of half a lemon or 1 ml lemon oil Preparation time: 10 min Baking time: 50-60 min Preparation: Preheat oven to 190 °C top/bottom heat. Heat the butter until it is liquid and add to the base mixture with 2 tbsp of the cream. Mix everything well and leave to stand for a while. Mix the topping base mixture with the quark, eggs, zest and juice of half a lemon and the remaining cream and mix vigorously with a hand mixer until you have a smooth mixture. Pour the flake mixture into a springform pan (Ø 26 cm) and press it evenly onto the base and sides of the pan with a damp spoon. Pour in the quark mixture and smooth out. Bake in the preheated oven on the lower shelf for approx. 50-60 minutes until the surface is golden brown. Leave to cool well in the baking tin. Vegan version: use margarine instead of butter and replace the 2 tbsp cream with 2 tbsp cereal drink. For the topping, replace the quark, eggs and cream with 4 tbsp soy flour and 750 g soy yogurt.
