Recipe idea: Castagnaccio For chestnut lovers. Southern Italian specialty between cake and bread. Delicious with strong red wine. 300g chestnut flour, 4 tbsp olive oil, 50g coarsely chopped pine nuts, 150 ml water, 1 tsp finely chopped rosemary, 1/2 tsp salt, 50g raisins, 3 tbsp sugar, olive oil. Soak the raisins in hot water for 20 minutes. Mix the chestnut flour, sugar, salt and rosemary with the oil and enough water to make a thick batter. Stir in the drained raisins and pine nuts. Pour the batter into a shallow baking tin lined with baking paper (max. 2 cm thick). Drizzle with olive oil and bake at 200°C for about 45-60 minutes until the surface looks like dry, cracked earth.
