We use the best demeter durum wheat for our durum wheat semolina. The grain is ground and the semolina is sieved with the greatest care and sensitivity. Durum wheat is a special type of wheat with a very hard grain. It is mainly grown in Italy, where it is traditionally used for pasta. Our durum wheat semolina has a beautiful yellow color and high cooking stability. It is particularly suitable for Italian pasta and pasta dough, but also for dumplings.
Durum wheat semolina is suitable for making pasta dough, gnocchi, semolina dumplings or semolina dumplings; basic recipe: Semolina dumplings: Beat 1 egg with 70 g butter until frothy and stir in 140 g durum wheat semolina. Season to taste with salt and nutmeg. Leave the dough to rest for approx. 10 minutes, then scoop out small dumplings with 2 teaspoons and simmer in a lightly simmering stock for approx. 15 - 20 minutes (depending on the size of the dumplings).
