For green spelt, spelt is dried over beech smoke. This gives the grain a hearty, spicy, nutty flavor. The grain is then coarsely ground.

Green spelt groats are suitable for patties or soups.Recipe: Green spelt pattiesIngredients: 200 g green spelt groats, 350 ml vegetable stock, 1 tbsp quark, 1 egg, 1 onion, salt, pepper and nutmegPreparation: Dice the onions and sauté in olive oil, add the green spelt groats, mix in well and fry briefly. Add the vegetable stock and spices and mix well. Leave the mixture to stand briefly, then mix in the quark and egg. Leave the dough to soak for 1 hour, shape into small patties and fry in olive oil. First fry the patties briefly on both sides over a high heat, then continue to fry slowly over a reduced heat until the patties are cooked on the inside. Serve with herb quark, for example.
