Damse Mokke Kuh
Our Damse Mokke Kuh is a soft white mold cheese with a beautiful, round shape of 10 cm. It owes its special taste and creamy texture to a unique production process and ripening cultures carefully selected by our master cheesemakers. It is made from pasteurized, exclusively Belgian local organic cow's milk at the Damse cheese dairy in Damme, near Bruges. The commitment we show as a family business guarantees sustainable production, and it is stored in a humid room to mature, which quickly develops white mold. After a ripening period of twelve days, the Damse Mokke Kuh is slightly dried and then packaged in micro-perforated letter paper, after which the cheese is left to ripen a little longer and is then ready for sale. The longer it matures, the more intense its flavor becomes.
It is best to store the Damse Mokke Kuh in the brie paper provided; the micro-perforations allow the cheese to breathe. Store the cheese in the refrigerator at a maximum of 7 degrees Celsius and allow the Damse Mokke Kuh to come to room temperature before presenting it. It can be served as an aperitif, on a cheese platter, as a spread, in cold dishes such as salads and hot dishes such as soups, in oven dishes and for gratinating.
