Spielberger Mühle's rye is carefully selected, cleaned and gently processed. As a robust, traditional grain, rye plays a central role in artisan bread production. The strong, slightly bitter aroma gives baked goods such as rye bread or mixed breads their typical taste, and the whole grain can be freshly crushed or ground and is particularly suitable for the preparation of sourdoughs, as it provides an ideal breeding ground for fermentation. Rye also unfolds its special character when cooked as a rustic side dish or as a base for grain salads, and is often used soaked or sprouted in fresh grain cuisine - this allows the full flavor and typical texture to be experienced particularly well. Rye is a grain with a long tradition and a wide range of uses in wholesome cuisine - ideal for families and food storage.
Basic recipe: Soak rye in water overnight, then cook in fresh water for about 45 minutes.rye is ideal for strong breads, rolls and sourdough starters, but can also be used as a cooked side dish, in salads or ground for patties.
