The best demeter oats are used for the oat bran. The grain is first dehulled, then ground in a special process and the flour is sieved off so that the bran remains. Oat bran consists of the valuable outer layers of the grain together with the germ and has a rather fine, almost powdery consistency, but with a slightly nutty, crunchy bite. Oat bran is a versatile product. It is suitable as an ingredient in bread and bread roll doughs as well as in pancakes and other baked goods. It is also used in muesli mixes, as it gives them a pleasantly creamy consistency. Due to its high swelling capacity, oat bran also acts as a natural binder substitute - for example in vegan burger patties or other dough-based recipes.
