Coconuts are still traditionally processed by hand in Sri Lanka. First, the thick green fibrous husk is removed from the coconuts after harvesting. To get to the white flesh, the hard shell is cracked open and the thin brown skin is peeled off cleanly with a knife - each step is laborious manual work. The white coconut flesh is then processed into coconut milk in a coconut mill. The coconut content of this product is 33%, making it ideal for light cuisine.
