Here's our take on the Korean classic: naturally fermented Chinese cabbage, carrots and leek with the typical flavor combination of fresh garlic, ginger and chili. Incidentally, our kimchi is made without the fish sauce used in many traditional recipes and is therefore vegan! In Korea, kimchi is served with every main meal and many scientists believe that the regular consumption of fermented cabbage is one of the reasons for Koreans' old age and good health.
Eat it with: Kimchi goes great with many Asian dishes, of course, but we also like to top sandwiches or burgers with it or eat it in a bowl, with vegetable soup or with avocado toast and scrambled eggs - even for breakfast.
