Pumpkin seed flour surprises with its fine, slightly nutty aroma. It is rich in protein, fiber and contains minerals such as iron, magnesium and zinc. Depending on the amount used, the flour gives dishes a subtle green hue, making them something special.

In conventional recipes, up to 25% of the amount of cereal flour can be replaced by pumpkin seed flour. 65g pumpkin seed flour replaces 100g cereal flour. Increase the amount of liquid until the usual dough consistency is achieved. Tip: Mix with a little salt to give the dough a salty, nutty flavor. For special spaetzle, replace some of the flour with pumpkin seed flour.
